Sunday Mimosas, Vegan Totchos, & Christmas Dinner
Hullo & Happy Holidays! I appear to be on the mend, so I wanted to share a round of the last few days.
Okay, so the Hubbs loves Hella Vegan Eats, but he really loves their totchos (for the uninitiated, “totchos” are basically nachos but made with tater tots instead of tortilla chips. And yes, vegan ones are totally possible when made with a vegan cheese sauce). He wanted to go last Sunday, but I had a different idea; so I asked Cody “what if I made you totchos?” He liked the idea, so after the farmers market, we stopped by the little organic grocery store around the corner, got supplies, and I set to work.
And here they are. Behold—my totchos!
Frozen tater tots, combined with my scramby tofu, black beans, a spicy homemade cashew cheese sauce, and garnished with cilantro, jalapeños, black olives, cherry tomatoes, salsa, guac, and Follow Your Heart’s new sour cream—which is the BOMB. Because it was Sunday, we had mimosas. Cuz, you know…. Sundays.
Cody was happy, and I thought it was pretty damn good myself. And somewhat easy too; all I had to make was the scramby tofu and cheese sauce, prepare all the garnishes, and pop the tots in the oven. Oh yeah….
In the meantime, Christmas came and went and we had an absolutely lovely few days. We had some family time, some holiday movie time, and a lot of doggie time, too. And yes, our pups all got toys and treats for the holiday. Oh and then there was the food. I love cooking on both Thanksgiving and Christmas; it’s one of my favorite parts of the holiday. While I love Tofurky (no, really, I do love the traditional Tofurky roast), we decided to go with a Field Roast, um, roast. Everything else I cooked from scratch.
